I’ve known Samantha Ferraro from Little Ferraro

I’ve known Samantha Ferraro from Little Ferraro Kitchen for several years now and I am delighted to introduce you to her latest cookbook, One-Pot Mediterranean, 70 Simple Recipes For Healthy and Flavorful Weeknight Cooking.

I’ve prepared several recipes from this book and they are all delicious. Most recently I made the Roasted Eggplant with Pomegranate Molasses and Zhug Vinaigrette. Wow! I could have eaten my weight in this eggplant dish. So flavorful and so easy to make.

I also made the Turkish Stuffed Peppers and Moroccan Meatballs with Saffron Couscous. And I’ve got more on the list to make this week!

If you love the flavors of the Mediterranean you will love the recipes in this book.
