I’m always finding, reading and listening to new and interesting things. Last week, after I listened to a particular podcast, I thought to myself, I should share this! Four Things Friday with a Smidgen of Delicious is my way of sharing what I’ve discovered and what I’m cooking each week.
First up is what I’m reading. I’m a avid reader (when I can stay awake!). My before bed ritual is to read and most of the time, I’m engaged in the text. But there are evenings my eyes lids are so heavy, I end up falling asleep. Probably due to a very busy day. Anyone else have this problem?
What I’m reading this week
The latest blog post from She’s Finding Happy. “Order Up! A Plate of Truth with a Side of Bad Ass”. I can totally relate to this title and this honest and authentic post. I cannot tell you how many times I’ve stumbled, fallen and yes, gotten my “you know what” kicked. But I attempted to Dare Greatly! I promise this is worth the time to click over and read. I’ve read it twice already and I’ll probably read it again before the day has ended.
My Kitchen Year: 135 Recipes that Saved My Life by Ruth Reichl I absolutely loved reading this cooking memoir. Heartfelt, warm, often poetic, funny, and oh, did I mention delicious?! The recipes are drool-worthy! If you’re looking for your next kindle book, this is it.
What I discovered this week
Plaka Sandals. Over the past month, I mounted a search for brownish, with maybe a smidgen of color, comfy sandals. Nothing fancy, just something to slap on when I needed to bolt out of the house but still look fresh and cute. These are so fun, love all the color options and score, they’re comfy! What I’m listening to (podcast and Music)
I have a long list of podcasts that I listen too (I’ll share more later) and I love them all for many different reasons. One of my favorite podcasts is Super Soul Sunday. I listened to this interview on Monday with Thich Nhat Hanh. His words of peace and compassion touched my heart.
Super Soul Sunday interviews are fascinating, educational, inspirational and often heart tugging. I feel like my soul is just a little healthier after each podcast. I know I’m getting all mushy on you here, but truly, I believe I need to feed my mind, body, and soul. Sometimes feeding my soul is a long walk on our rolling pastures or on the wooded trails with Gus, listening to mediation music, silent prayer or even simply cooking in my kitchen alone with my fave new tunes. Whatever it is, feeding the soul is an important part of my life. It keeps me grounded and in tune with my surroundings. I’m an empathetic soul by nature and this often depletes my mental and emotional energy. So, taking care of my soul, basking in the quiet and even writing, refills my well.
What I cooked for my family this week
Since my youngest daughter’s birthday celebration that had a Cajun and Creole theme dominating the food we served, I’ve had Cajun flavors on the brain. So I created this fun Cajun Potato Salad recipe for the summer months. A little bit Cajun and a whole lot of delicious! This recipe turned out so good that I made a second batch to take to my daughter this morning. It’s a playful salad that will pair with everything you serve up this summer. I’d love to hear how you like it and how you might change it for your family’s taste buds.

Cajun Potato Salad
Ingredients
- 4lbs yellow potatoes, washed and 2-3 inch cubed (I don't peel the potatoes because I like the skin)
- 1 1/2 cups mayonnaise, or more to taste
- 2 teaspoons Cajun seasoning, or more to taste
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 2 teaspoons sugar
- 2 tablespoons yellow mustard
- 1/4 - 1/2 cup dill pickle relish, or to taste
- 2 tablespoons finely chopped parsley
- 1/2 sweet onion, diced
- 1/2 cup sliced green onions
- 1/2 cup diced celery
- 4 boiled eggs, sliced
- 1 cup diced cooked andouille sausage or bacon
- Salt and pepper to taste
- Sliced green onions and chopped parsley for garnish
Instructions
- Boil the potatoes in a large pot of water until tender but not mushy. About 8-15 minutes depending on the size of the potatoes. Drain them and let them cool.
- Mix together the mayonnaise, Cajun seasoning, garlic, apple cider vinegar, sugar, yellow mustard and pickle relish. This will be your dressing.
- Next gently toss the cooled potatoes with the dressing mixture, chopped parsley, sweet onions, green onions, celery, three of the sliced boiled eggs and sausage until nicely combined. Add additional Cajun seasoning or salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving. Garnish with the remaining boiled egg slices and sliced green onion and chopped parsley.
