If you asked me to choose either sweet or savory, I’d choose both. As long as they’re paired together, like this Strawberry Chicken Salad with Micro-greens.
Have I ever mentioned how much I love pretty little tea sandwiches? Maybe it’s because it reminds me of my great-aunt Margaret and the cucumber cream cheese sandwiches she always made when I visited. The soft and pillowy white bread was laced with a smidgen of cream cheese and then layered with thinly sliced cucumbers.
When my Aunt served the sandwiches, my Uncle would pour the champagne and orange juice for mimosas. Then we’d sit around the table eating, sipping and listening to my Uncle regale us with wild stories of his days on the stage and flying planes in the war. I always thought it was funny that tea was never involved during those visits.
When my daughters were little, tea parties were endless events in our house. Although the tea sandwiches were always peanut butter and grape jelly or ham and cheese with mustard. Because my youngest insisted on ham and cheese with mustard. I think if I’d suggested these Strawberry Chicken Sandwiches with Micro-greens back then, I would have been met with a revolt. Actually, knowing my girls, they would have picked all the strawberries out of the salad.
However, when I was testing this recipe and shooting these photos for my client a few years ago, both my daughters happened to be home. The girls had nothing but beautiful praise for these Strawberry Chicken Salad sandwiches and my oldest daughter said they were the best chicken salad sandwiches she’d ever had. Which made me laugh. My oldest daughter was in college at the time, so most everything tasted better than college food.
I have to admit however, this Strawberry Chicken Salad with Micro-greens makes for a playful and delicious tea sandwich. It’s cheerful in color and festive in flavor and celebrates the new season with exuberance. This salad makes a lovely tea sandwich for a weekend brunch or special Mother’s Day occasion.
Or, you can make it for yourself and keep it in the fridge for snacking. That’s what I do. 😉

Strawberry Chicken Salad with Micro-greens
Notes
This strawberry chicken salad is vibrant with color and flavor. These lovely tea sandwiches pair well with a robust black or fragrant oolong tea.
Ingredients
- 4 cups diced cooked chicken
- 1 large shallot, diced
- ½ cup finely chopped toasted walnuts
- 2 tablespoons fresh basil, chopped or chiffonade
- 1/3 - ½ cup good quality mayonnaise
- Salt and pepper to taste
- 1 quart strawberries, chopped, drain any liquid
- 1 tablespoon apple cider vinegar
- 1 cup of microgreens
- 1 - 2 loaves sliced bread
- 2-3 tablespoons butter
Instructions
- 1. In a large bowl mix together the diced chicken, shallots, walnuts and basil. Fold in the mayonnaise and season with salt and pepper to taste.
- 2. Gently fold in the chopped strawberries. Chill the strawberry chicken salad for about 30 minutes.
- 3. Cut the crust off the bread slices. Spread the chicken salad on half the bread slices, and then spread a little butter on the other half of the bread slices. Place a tablespoon of microgreens on top of the chicken salad and then top with a buttered slice of bread. Cut in half diagonally and place on a platter. Continue until all the sandwiches have been made.
- Note: This salad is lovely on dark rye, sourdough, white and whole grain.
