My kitchen was tea and jelly stained Saturday morning. Trying desperately to get the “perfect” picture of these delicious little lovelies, I must have been leaning over to far and my darling little red step stool went flying out from under me.
You can only guess what happened then. Yep. Tea, jelly, oatcakes, linens and dishes went flying as I slammed into them on my way down to the hardwood floor. It was quite the scene.
A few minutes later, Suzie Q walked into the kitchen and announced I was making way too much noise. I had woken Sleeping Beauty.
Sleeping Beauty couldn’t be irritated for long because I had a delicious stack of Banana Maple Oatcakes on the counter for breakfast. These were the oatcakes that managed to avoid the crash.

I’m constantly encouraging (most likely nagging) my family to sit at the counter and slowly enjoy breakfast. However, a few of my family members (make that one in particular) would rather sleep until the last-minute and then eat breakfast walking out the door. She calls these moist and tasty oatcakes “run to the bus breakfast”. This is because many mornings she can be seen racing to the bus with a few oatcakes in hand.
Banana Maple Oatcakes look like a cookie but feel more like a pancake met a muffin. They are perfect for breakfast, as a snack, with coffee or tea and with a little homemade jam smeared on top.
And as Tank, our feisty Cairn Terrier and general kitchen floor sweeper, would tell you if he could talk… they’re tasty eaten right off the hardwood floor.
Banana Maple Oatcakes
Ingredients
1 ½ cups flour (I used Jovial Einkorn Whole Grain Flour)
1 cup quick oats
1 teaspoon baking soda
½ teaspoon salt
1/3 – ½ cup real maple syrup
2 eggs
¼ cup oil
¼ cup milk
1 large very ripe banana, smashed
Directions
Mix together the flour, oats, baking soda and salt.
Then whisk together the maple syrup, eggs, oil, milk and mashed banana.
Heat a griddle or large non-stick pan you use for pancakes on medium to medium low and lightly butter or oil the pan.
Ladle rounds of about ¼ cup each onto the hot pan and brown each side just like making pancakes.
Transfer to a platter and serve warm with jelly, almond butter, fresh fruit and Devonshire cream or anything else that tickles your fancy.
I love to make extra and keep them in a bag in the frig for a quick “on the go” breakfast. Re-heat for just a few seconds in the microwave.
Add Ins: Sometimes I add raisins, chopped nuts, chopped dried fruit and spices like cinnamon and fresh grated nutmeg.

Karista, these sound amazing! I was thinking of making a batch and put them in the freezer. Do they have the texture that I could pop them into the toaster from the freezer?
I do! I was just thinking Saturday they would make a great freezer item and then popping in the toaster to warm. I haven’t tried it but I think it would work. Let me know if you try it. Both the girls love these but I think Craig loves them more. 🙂

Hahaha! Alyssa I’m usually the last one to bed at night and the first one to rise in the morning. Something is wrong with this picture. LOL! Truly though, I dawdle around the house picking things up, straightening, folding quilts and reading before bed. In the morning I hop out of bed early to have coffee so I can let the chicken girls out at first light. I might as well live on a farm. 🙂
Wow, Karista, what a crash and tumble…I can imagine you had one sticky (and delicious) kitchen. These oatcakes look fabulous and tempting – I appreciate all you did to share them with us! Grabbing one on the way out the door is an ideal portable breakfast, too.
Hannah I found jelly on the window this morning. Not sure how I missed that. LOL! Thanks, these are delicious and mostly healthy. I do love the Einkorn ancient wheat as it boasts a cool 9 grams of protein per serving.

Karista this looks so delicious. Bananas and maple syrup together sounds like such a great combination of flavors. We too are always, late running out the door for the bus. I may try and do what Jodi is going to do too. Anything to have a good quick healthy start. Feel a bit guilty with all the cereal they consume.. 🙂

Hmmm…might have to see if the Muffin Hater would eat these…she’s on a steady diet of cinnamon toast right now. I don’t keep quick oats around – if I make the batter up the night before, do you suppose regular oatmeal would work? Or maybe a quick chop in the food proccessor?

Pancake perfection and not a spill of tea in sight. I love the title too and often feel that run for the bus breakfasts, they deserve more mention, more often! Oatcake are such a hearty thing, sometimes I like them with just a bit (or a lot) of butter! Ooo and honey. Ok, shall I just say I love them in general…

How about pear? Or even applesauce. The banana not only flavors the oatcake but gives it some moisture too. I think mashed pear or thick applesauce would be fabulous. Delicious Wishes!

These look good for this Sunday morning. I’m throwing pecans in there too because I’ve been on a maple pecan kick (just made muesli).
Those crashing moments are serious growth opportunities… and just a pain in the rear- except for Tank’s bonus breaky.
As for non-breakfast eating teen- I’m happy to get a chai tea in her with honey and milk. I do believe she snacks at ten and does have a healthy appetite otherwise. She just does NOT like getting up any morning of the week!
