I have a long list of blogs I love to read. As I was browsing one such blog today (The Faux Martha) I noticed she mentioned “Wordless Wednesday”. Hmmm…. I like the sound of that. Could I possibly impose this on my two sassy gals today? Just kidding! 😉

Instead of imposing wordless Wednesday on my family, I thought I’d use this lovely little term in my blog post today.

Instead of paragraphs of words I’m sharing pictures of this delicious Moroccan Roasted Fish (recipe follows!) and a few highlights from our glorious hike on Mt. Rainier. Enjoy!







Ingredients
- 1 ½ lbs Halibut cut into 4 filets (I love this with Halibut filets but can be used with most any thick fleshed fish)
- Cilantro, a handful finely chopped
- Italian Parsley, a handful finely chopped
- Capers, tablespoon coarsely chopped
- Garlic, 2 cloves minced
- Smoked paprika, 1 ½ teaspoon
- Ginger, 1 teaspoon grated, or a little more if you love ginger
- 4 thin slices of lemon
- Lemon juice of one lemon
- 3 tablespoons oil
- Salt and pepper to taste
- Pinch red pepper flakes or cayenne (optional)
Instructions
- 1. Pre-heat the oven to 400F and line a baking sheet with parchment.
- 2. I like this hand chopped instead of pureed in a food processer. Combine all the above ingredients in a bowl and set aside.
- 3. Season the fish with salt and pepper and lay the fish skin side down on the parchment.
- 4. Spread the herb caper lemon mixture evenly over the top of the fish filets and place a lemon slice on each piece of fish. Then place the baking sheet in the oven and roast for about 8-10 minutes depending on the thickness of your fish. For every inch of thickness cooking time is about 8-10 minutes.
- 5. When the fish is done, flaky and opaque, take it out of the oven and either place on a platter to serve or individual plates. Garnish with additional fresh lemon wedges.
- 6. I love this dish served with roasted fennel and tomatoes, crisp green salad or apricot laced couscous. Delicious!

Thanks Betsy! I think its my new fave way to make halibut. We have so much fun hiking and Mt. Rainier was one of our goals this summer. Although we wanted to hike to Camp Muir (base camp) but the weather took a turn and we didn’t have the right equipment. It was a full five hour hike and I could hardly walk by the time we got back to the lodge. hahaha!
5 hours! Oh my gosh…I would be in bed for a day after doing that. You must be in great shape! 🙂
Well I thought I was but after that hike I’m re-thinking my version of “in shape”. LOL!

Hahaha! I love your wildlife wednesdays! I could probably post a wildlife wednesday as I’ve got some sort of creature digging up my romaine. 🙁 And an old cranky racoon that loves to hide under the front deck. But I think I’ll stick to wordless wednesday. Kind of liking this wordless stuff. 😉
I think you hike must have been amazing. I huff and puff just walking the little hills at home. Love your fish recipe…it has to be so flavorful.
The scenery was breathtaking Karen. Part Sound of Music, part Wild Alaska. The air so clean and fresh, although I did my share of huffing and puffing trying to keep up with my husband who was always 50 feet ahead of me. 🙁 The fish is full of flavor and a nice change to the summer grill menu. Alli you would love this as its similar to a Moroccan Chermoula. Just not as spicy, no saffron but some smoked paprika. I guess it’s slightly like a Chermoula. LOL! And our mountain usually stays snow capped year round. It’s a lovely mountain and a great destination to visit. If you ever head this direction I’ll take you to see it!

Karista is a genius! This was amazing. The best part it that I made the whole meal in less than 30 min. I cooked a whole wheat pasta to go with and in the water I put basil, oregano, garlic, and two purple heirloom tomatoes chopped up. Then i added the pasta and boom! Super easy and sooooooo good. Thanks Karista again for a great way to make my Halibut delicious.

Katie, what a beautiful place in the world! Ranger Craig and I lived in Norton, Mass many years ago and traveled all over NH, Vermont and Maine. I remember visiting the White Mountains and an old Hotel from the turn of the century. So absolutely beautiful. Enjoy the recipe!
