Grilled Marinated Chicken Burgers with Avocado, Tomatoes and Gruyere

101_5034I’m always looking for creative ways to prepare standard kitchen staples such as chicken.  Grilled chicken breasts are always a good choice for dinner.  However, marinate the chicken breasts, grill them to juicy perfection and then top with the delicious flavors of summer and you have one fabulous choice for dinner.   

There are many marinating options for chicken.  A marinade can be as simple as bottled vinaigrette or as complex as homemade vinaigrette with fresh herbs, spices and seasonings.  One of my favorite marinades is a well known, but old standard on the supermarket shelves that’ll probably surprise most of you, especially those who know me.  Good Seasons Italian Dressing makes a bold and flavorful marinade for chicken breasts and pork chops, not to mention it also makes a grand choice of salad dressing for a fresh summer salad. 

Serve your marinated chicken breasts with toasty whole grain buns, sliced fresh Avocado, sliced summer tomatoes, a piece of romaine lettuce and top with a thin slice of Gruyere cheese.  Gruyere cheese is a type of Swiss cheese that has a slightly sweet and nutty taste.  If you can’t find Gruyere, feel free to substitute with traditional Swiss cheese. 

My family’s additional chicken burger toppings include bacon, or pancetta, sautéed mushrooms and onions and one of my children always insists on topping her chicken burger with barbeque sauce. 

So, tonight make your summer grilling easy, everyday gourmet!  

Grilled Marinated Chicken Burgers

 4-6 free range or organic fresh chicken breasts

1 package Good Season’s Italian Dressing prepared to package directions

 In a Ziploc bag or glass dish marinate the chicken breasts in the Italian dressing over night or at least 8 hours prior to grilling.

Pre-heat the grill to 400 degrees.  Grill the chicken breasts over direct medium heat until the meat is firm to the touch and no longer pink in the center, about 8-10 minutes, turning once.  When the chicken breasts are done, place a thin slice of gruyere on each breast and transfer to a platter. Next, lightly grill the whole grain buns until toasty and then transfer to a platter. 

Set out the sliced avocado, tomatoes, romaine leaves, assorted condiments and platter of chicken breasts and buns buffet style.  Serve with homemade Macaroni Salad and a bowl of barbeque chips!  Yum!

Whole Grain Burger Buns

Fresh Avocado, sliced

Fresh Summer Tomatoes, sliced

Gruyere cheese, thin sliced (or Swiss cheese)

Romaine leaves

Assorted condiments of your choice such as:  Mayo, Dijon, pickles, onions, BBQ sauce, peppers, bacon, and sautéed mushrooms, etc.
