Risotto is true comfort food.  Just the act of preparing risotto feels comforting, soothing somehow.  Maybe it’s because when I make risotto I like to turn on old Italian music and channel my inner Italian; or maybe it simply reminds me of time spent in Italy with the most wonderful and delightful people.

Although risotto feels like comfort food, it also feels lush.  A bit decadent and a bit indulgent.  That could be another reason I love preparing risotto for my family – tossing in and adding seasonal ingredients like roasted pumpkin to create an even greater indulgent experience.

    Such a beautiful presentation! Really stunning, Karista! I am so with you…risotto may be one of my favorite dishes to make. I always say it’s zen-like. Love this with that roasted pumpkin! Looking forward to making this beauty!

    I’m one of those people who loves the whole process of making a risotto – it can be therapeutic and kind of magical to see it all come together! Heading over to VRAI now x

      I know! I always thought the same thing Ksenia. I especially love making risotto with a glass of vino in hand and family or friends hanging about the kitchen to keep me company and do a little stirring. 🙂

    Love, love risotto and all its starchy goodness! Looks super cute in the mini pumpkins and I’ve no doubt tastes amazing too. (Is it wrong to crave risotto) even though it’s breakfast time here?!? 😉
